About Daniel Lyndon – Dan the Chef

Daniel combines traditional bush tucker and modern techniques with Aboriginal art and cultural storytelling, creating a style that is uniquely his own — elevated, authentic, and full of heart.

“I’m Badimaya, Yamatji, Whadjuk, Yued, with connection to Ngarluma, and Mirning mob. My roots run deep in the land. I live and work in Boorloo (Perth) on Whadjuk Noongar boodja." 

For Daniel, cooking began as a way to connect with Family. He was influenced by his Nana about food and cooking, infused with story by his Elders, and artistically inspired by his Aunty. Their collective teachings shaped his respect for using Indigenous ingredients not only for their taste and nutrition, but for their healing and spiritual qualities, and their deeper cultural significance.

Today, Daniel is a fully qualified chef with over 16 years’ experience, including nine as Head Chef and two Chef of the Year nominations. Through Bimba Foods, he shares his heritage in a modern, artful form, creating delicious food that is refined, meaningful, and unmistakably Australian.

The meaning of Bimba

Bimba is a bush lolly — the sap from the Gariya tree in the Badimaya language. It can be eaten straight from the tree around a month after heavy rain. Traditionally, Bimba was also used as bush medicine, boiled and infused to make teas believed to cleanse the body and support wellbeing.

 

Daniel named his business Bimba Foods to reflect the spirit of bringing family and community together — sharing food, stories, and connection.

 

To honour the traditional story of the Bimba Tree, Aunty Lorretta Egan hand-painted this artwork for Daniel. Her beautiful painting tells the story of mob travelling across Country, collecting the sweet bush lolly from the Gariya tree, and gathering together to share this natural delicacy. The artwork celebrates mob coming together through authentic, tasty food — a true reflection of what Bimba Foods is all about.
